These lettuce wraps are my go-to when I want something fresh and satisfying without feeling weighed down. Ingredients

For the Filling:

  • • 1 lb ground turkey
  • • 2 tbsp sesame oil
  • • 3 cloves garlic, minced
  • • 1 tbsp fresh ginger, grated
  • • 1 red bell pepper, diced
  • • 1 cup shredded carrots
  • • 4 green onions, sliced
  • • 1/4 cup cilantro, chopped

For the Sauce & Wraps:

  • • 3 tbsp soy sauce
  • • 2 tbsp rice vinegar
  • • 1 tbsp honey
  • • 1 tsp sriracha (optional)
  • • 1 tsp cornstarch
  • • 1 head butter lettuce
  • • Lime wedges for serving
  • • Extra cilantro for garnish

Instructions

  1. 1. Separate lettuce leaves carefully, wash, and pat dry. Arrange on a serving platter.
  2. 2. In a small bowl, whisk together soy sauce, rice vinegar, honey, sriracha, and cornstarch. Set aside.
  3. 3. Heat sesame oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up, for 5-6 minutes.
  4. 4. Add garlic and ginger to the turkey, cooking for another minute until fragrant.
  5. 5. Stir in bell pepper and carrots, cooking for 3-4 minutes until vegetables are tender-crisp.
  6. 6. Pour the sauce over the turkey mixture and stir well. Cook for 2 minutes until sauce thickens slightly.
  7. 7. Remove from heat and stir in green onions and cilantro.
  8. 8. Serve immediately with lettuce cups, lime wedges, and extra cilantro on the side.
