Classic Hamburger Steak & Gravy

30 minutesEasyServes 4

Hamburger steak reminds me of those weeknight dinners when mama needed to stretch the budget but still wanted to put something special on the table. It's simple ground beef transformed into something elegant and satisfying, smothered in the most incredible onion gravy that makes everything taste like Sunday dinner. There's something so honest about this dish— no fancy ingredients, just good technique and lots of love. It's comfort food that speaks to the soul and proves that the best meals often come from the humblest beginnings.

Ingredients

For the Steaks:

  • • 1.5 lbs ground beef (80/20 blend)
  • • 1 egg, beaten
  • • 1/3 cup breadcrumbs
  • • 1/4 cup onion, finely diced
  • • 2 cloves garlic, minced
  • • 1 tsp Worcestershire sauce
  • • 1 tsp salt
  • • 1/2 tsp black pepper

For the Gravy:

  • • 2 large onions, sliced
  • • 3 tbsp flour
  • • 3 cups beef broth
  • • 2 tbsp vegetable oil
  • • 1 tsp garlic powder
  • • 1 tsp onion powder
  • • Salt and pepper to taste
  • • 1 tbsp butter (optional)

Instructions

  1. 1. In a large bowl, combine ground beef, egg, breadcrumbs, diced onion, garlic, Worcestershire, salt, and pepper. Mix gently—don't overwork the meat.
  2. 2. Shape mixture into 4 oval patties, about 3/4 inch thick. Make a small indent in the center to prevent puffing while cooking.
  3. 3. Heat oil in a large skillet over medium-high heat. Cook patties for 4-5 minutes per side until nicely browned. Remove and set aside.
  4. 4. In the same skillet, add sliced onions and cook until golden and caramelized, about 8-10 minutes.
  5. 5. Sprinkle flour over the onions and stir constantly for 2 minutes to cook out the raw flour taste.
  6. 6. Gradually whisk in beef broth, scraping up any browned bits from the bottom of the pan.
  7. 7. Add garlic powder, onion powder, salt, and pepper. Bring to a simmer and cook until gravy thickens, about 5 minutes.
  8. 8. Return hamburger steaks to the skillet, spooning gravy over top. Cover and simmer 10 minutes.
  9. 9. Check that internal temperature reaches 160°F. Stir in butter for extra richness if desired.
  10. 10. Serve immediately with mashed potatoes, rice, or your favorite sides. Spoon plenty of that amazing gravy over everything!

Bre's Pro Tips

  • • Don't overmix the meat or it will become tough
  • • Let onions caramelize properly for deeper gravy flavor
  • • Use a meat thermometer to ensure perfect doneness
  • • Add mushrooms to the gravy for extra richness
