Southern Smothered Potatoes

35 minutesEasyServes 4-6

Smothered potatoes are like a warm hug on a plate—simple ingredients transformed into something absolutely magical through the power of patience and love. My grandmother would make these on Saturday mornings, letting them cook low and slow until the potatoes were tender and the onions were sweet and golden. She'd say, \"Good things can't be rushed, baby,\" and these potatoes are living proof. The way the onions and peppers meld together, creating this incredible flavor that makes even the simplest potato taste like something special.

Ingredients

Main Ingredients:

  • • 3 lbs Yukon Gold potatoes, sliced
  • • 2 large onions, sliced
  • • 1 large bell pepper, sliced
  • • 4 strips bacon, chopped
  • • 1/4 cup vegetable oil
  • • 2 tbsp butter
  • • 1/2 cup chicken broth

Seasonings:

  • • 2 tsp salt
  • • 1 tsp black pepper
  • • 1 tsp garlic powder
  • • 1 tsp onion powder
  • • 1 tsp paprika
  • • 1/2 tsp cayenne pepper
  • • 2 green onions, chopped
  • • 2 tbsp fresh parsley, chopped

Instructions

  1. 1. Wash and slice potatoes about 1/4 inch thick. You can peel them or leave skins on for extra texture and flavor.
  2. 2. Cook chopped bacon in a large cast iron skillet until crispy. Remove bacon but leave drippings in the pan.
  3. 3. Add vegetable oil to bacon drippings and heat over medium heat. Add sliced potatoes in a single layer.
  4. 4. Season potatoes with salt, pepper, garlic powder, onion powder, paprika, and cayenne. Don't stir yet—let them develop a golden crust.
  5. 5. After 8-10 minutes, flip potatoes and add sliced onions and bell peppers to the skillet.
  6. 6. Add butter and gently stir everything together. Cover and cook for 15-20 minutes, stirring occasionally.
  7. 7. When potatoes are fork-tender and onions are caramelized, add chicken broth to create a light gravy.
  8. 8. Simmer uncovered for 3-5 minutes until liquid reduces slightly.
  9. 9. Return crispy bacon to the skillet and gently fold in with green onions and parsley.
  10. 10. Taste and adjust seasoning as needed. Serve hot as a side dish or even as a hearty breakfast!
